I wanted to share a recipe with you guys out in blog world. Ella is addicted to vegetables...seriously three nights ago the girl refused to eat anything for dinner except for a salad and her vegetables out of her pasta. Her other favorite food group is sweets. I don't get it vegetables and sweets. Luke on the otherhand is not addicted to vegetables and I am always looking for ways to get more of them into his stomach. I have found that he loves raw vegetables with lots and lots of ranch dressing. The problem is I don't feel that great about all the addictives and preservatives in ranch dressing. So recently I came upon this recipe for homemade ranch dressing. Today for lunch my kids ate raw broccoli, carrots, and cauliflower with it and LOVED it. I really enjoyed it myself and I'm sure it will be a keeper in the Lyle family. Here it is
1/2 cup plain nonfat yogurt or 1/3 cup plain Greek-style nonfat yogurt
1/3 cup lowfat buttermilk (would suggest not using this much...makes it too runny)
3 Tbsp. mayonnaise
1 tsp dijon mustard
1/2 tsp onion powder
1/4 tsp garlic powder
1 Tbsp chopped fresh chives
Salt to taste
If using regular yogurt, place it in a strainer lines with a paper towel and set the strainer over a bowl. Let the yogurt drain for 20 minutes. Then you mix all the ingrediants and serve. Hope you enjoy!!!!
